Ezme Salata - Acılı (Hot Tomato Salad)

Ingredients
- 3 medium-sized tomatoes 1 small red onion
- 1 clove garlic, crushed
- 1 tsp. tomato purée
- 1 tsp. red pepper purée ½ pointed red pepper 1 hot chilli pepper, could be ½ red & ½ green
- Good handful parsley, finely chopped
- 2 tbsp. finely chopped mint
- A few celery leaves, optional
- Pinch chilli flakes
- 1 tsp. red pepper
- 1 tsp. sumac
- 3 tbsp. olive oil
- 1 tbsp. lemon juice
- 1tsp. pomegranate molasses
- Salt
- Freshly ground black pepper
- This spicy tomato salad can be served as a Meze, or as an accompaniment to grilled meat.
Method
A lot of fine chopping required for this recipe! A small mini chopper will come in handy.
Everything needs to be very finely chopped, so if you have a mini chopper use this to chop the onion.
Finish off with a knife if necessary. Place in a bowl. (The fresh herbs could be put in together with the onion to finely chop).
Chop the tomatoes with a knife, again very finely, reserving all the juice that you can. Add to the onions together with the crushed garlic. Stir in the tomato and pepper purées until well mixed in.
Finely chop the peppers, parsley, mint and cerlery leaves and add these to the bowl.
Next add the chilli flakes, red pepper and sumac.
In a small jug whisk together the olive oil, lemon juice and pomegranate molasses. Pour over the salad and season to taste.
Cover and leave in the fridge to allow the flavours to mingle.
