Sigara Börek (Fried Cheese Pastries)

Ingredients
- 1 or 2 sheets of yufka or 4-6 sheets filo pastry
- Melted butter for brushing (filo sheets only)
- Feta cheese, crumbled
- Parsley or dill, finely chopped
- Paprika
- Seasoning
Method
Mix filling ingredients together.
Cut yufka into about 12 or more triangles. For the filo pastry lay two sheets on top of each other and cut lengthways into approx. 13 cm. (5”) widths so that you have long double strips. The widths don’t need to be too exact.
Take the first triangle (yufka) or double strip (filo) and for filo pastry only brush with melted butter. Place filling at the edge nearest to you, fold in sides and roll up - like cigars. With your fingertip, wet edge with water to seal well. Continue with the remaining pastry.
Fry in sunflower oil 2-3 minutes until golden brown. You can now serve or reheat in the oven later.
Note:
These freeze extremely well. Freeze before frying: place separately on a baking sheet and when solid place in a polythene bag or box.
Defrost thoroughly before frying.
