Mint Sauce

Ingredients

  • 1 small handful mint leaves
  • 1-2 tbsp. caster sugar
  • 50 ml. boiling water
  • 4 tbsp. white wine vinegar*

Method

Finely chop the mint leaves together with 1 tsp. of the caster sugar – this helps to fix the colour of the leaves.

Place into a Pyrex jug, add the remainder of the sugar (to taste) and pour over the boiling water. Stir well and leave to cool.

Now stir in the white wine vinegar and taste.

Add more of the white wine vinegar or water if necessary.

Leave to infuse for about an hour before serving.

* Don’t be tempted to use Malt vinegar, it is far too strong.
