Roasted Chicken pieces in Barbecue Sauce

Ingredients
- 6-8 chicken breasts/chicken legs/chicken thighs
- (any combination)
- Olive oil
- 1 large onion, chopped small
- Black pepper, freshly ground
- 75 ml. (3 fl. oz.) red or white dry wine
- 4 tbsp. soy sauce, reduced salt
- 100 ml. (3½ fl. oz.) water
- 2 tbsp. Worcestershire sauce
- 1 heaped tbsp. tomato purée
- 1 heaped tsp. mustard powder
- 2 fat cloves garlic, crushed
- 1 cm. (½") piece grated fresh ginger
- or 1 heaped tsp. ground ginger
- 1 tbsp. brown sugar
- Preheat oven to 190°C.
Method

If using chicken breasts, cut in half and dry on kitchen towel. Rub olive oil over each piece and place in a roasting dish. Mix in the chopped onions and sprinkle over the black pepper.

Cook for 15/20 minutes, stirring once in between.

Make up the sauce by whisking together all the other ingredients and pour over the chicken. Bake for a further 15 minutes until chicken is cooked.

Serve with oven chips and Heinz baked beans!
