Roasted Chicken pieces in Barbecue Sauce

Ingredients

  • 6-8 chicken breasts/chicken legs/chicken thighs
  • (any combination)
  • Olive oil
  • 1 large onion, chopped small
  • Black pepper, freshly ground
  • 75 ml. (3 fl. oz.) red or white dry wine
  • 4 tbsp. soy sauce, reduced salt
  • 100 ml. (3½ fl. oz.) water
  • 2 tbsp. Worcestershire sauce
  • 1 heaped tbsp. tomato purée
  • 1 heaped tsp. mustard powder
  • 2 fat cloves garlic, crushed
  • 1 cm. (½") piece grated fresh ginger
  • or 1 heaped tsp. ground ginger
  • 1 tbsp. brown sugar
  • Preheat oven to 190°C.

Method

If using chicken breasts, cut in half and dry on kitchen towel. Rub olive oil over each piece and place in a roasting dish. Mix in the chopped onions and sprinkle over the black pepper.

Cook for 15/20 minutes, stirring once in between.

Make up the sauce by whisking together all the other ingredients and pour over the chicken. Bake for a further 15 minutes until chicken is cooked.

Serve with oven chips and Heinz baked beans!
