Lamb Köfte

Ingredients
in this recipe as household teaspoons vary
- 500 gr. (1lb. 2 oz.) minced lamb
- ½ small onion
- 1 tbsp. water
- 1 heaped tbsp. finely chopped parsley
- 2 cloves garlic, crushed
- ½ tsp. cumin
- ½ tsp. paprika
- Sprinkling cayenne pepper
- ½ tsp. dried mint
- ½ tsp. tomato purée
- 1 egg yolk
- 1 tsp. salt
- Freshly ground black pepper
- This is one of our favourite recipes for köfte and ideal for barbecues, in which case I make them larger.
Method

The onion needs to be chopped really fine. I use a small chopper.

Using the chopper, whizz the onions until they are finely chopped. Next add a tablespoon of water and the roughly chopped parsley. Whizz again until they are nice and fine.

Put the minced lamb into the food processor and add the onions and parsley. Put in the rest of the ingredients.

Process until well mixed but not too much. Take out and place in a bowl. Wet your hands with a little cold water and knead gently into a ball.

Keeping your hands slightly wet, break off 12 pieces and form into plump round balls, flatten slightly.

Fry in a little oil in a frying pan about 3-4 minutes each side on a medium heat. They should be nicely browned, adjust heat whilst frying if necessary.
