Köfte Patates (Koftas with potatoes in a tomato sauce)

Ingredients

  • 1 onion, chopped
  • Olive oil
  • 2 beefy tomatoes, skinned & chopped
  • 1 can chopped tomatoes, whizzed in
  • blender
  • ½ large red pepper, diced
  • ½ large green pepper, diced
  • 1 tbsp. paprika
  • 1 tsp. vegetable stock powder
  • Salt
  • Freshly ground black pepper
  • 150 ml. (¼ pt.) water + more if necessary
  • 16 köfte
  • 5 medium potatoes, cut into
  • 1 cm. (½") thick rounds
  • Chopped parsley, to serve
  • Preheat oven to 180°C.

Method

Fry onions in olive oil, until softened. Add chopped tomatoes, stir round. Add the canned tomatoes which have been whizzed in blender. Sprinkle in paprika, Marigold stock powder, salt and pepper. Stir in diced peppers. Add about ¼ pt. water and simmer for about 10-15 minutes.

Whilst that is cooking, fry köfte on ridged pan until nicely browned and cooked. Place in bottom of casserole dish.

Fry potato rounds in deep fat until cooked and browned. Lift out onto kitchen towel and when drained, place in casserole dish together with the köfte.

Pour the tomato sauce over the köfte and potatoes. Bake in oven at 180°C for about 30-45 minutes. The potatoes may soak up too much of the juices so keep checking that the sauce doesn't thicken too much, add a little hot water if necessary. This dish should have a nice amount of juice in it and should be neither too thick nor too runny!

Sprinkle over some chopped parsley and serve.
