Green Beans in a minced beef and tomato sauce (Kıymalı Yeşil Fasulye)

Ingredients
- 2 x 250 gr. (9 oz.) packs stringless/flat green beans
- 1 onion, finely chopped
- 150 gr. (5 oz.) minced beef
- 2 cloves garlic, crushed
- 1 tsp. tomato purée
- 2 beefy tomatoes, skinned and chopped
- 1 tsp. vegetable stock powder dissolved in 1 pt. boiling water
- Chopped parsley
- 1 tbsp. Joan’s mixed herbs
- 1 tsp. paprika
- Salt
- Freshly ground black pepper

Fry the onions in 2-3 tbsps. olive oil in the pressure cooker until softened. Stir in the minced beef, breaking up any lumps with a fork. When beginning to brown add the garlic and tomato purée and mix well.

Stir in the green beans, coating them with the meat mixture and when they begin to lighten in colour, add the herbs and seasoning.

Finally stir in the chopped tomatoes and the stock.

Pressure cook for about 20 minutes and leave to reduce to room temperature. I find the beans become darker and absorb more flavour when cooked for this length of time.

Serve with garlic bread.
