Fırında Köfte (Koftas with potatoes & peppers baked in the oven)

Ingredients
- 16 köfte
- 6 Potatoes
- 50 ml (2 oz.) olive oil
- 3 assorted Bell peppers
- (red, orange, green)
- 3 large tomatoes
- (skinned and chopped)
- 150 ml (5 fl. oz.) hot water (add
- 1 heaped tsp. vegetable stock powder to this)
- Salt
- Freshly ground black pepper
- Preheat oven to 200ºC
Method
Peel and slice the potatoes into thick wedges or rings. Place into a large baking tin and season with the salt and pepper. Pour over the olive oil and coat the potatoes well.
Cut the peppers into two, lengthways, de-seed and cut into long, 2 cm (¾”) width strips. Skin and chop the tomatoes.
Scatter the pepper strips over the potatoes and place the köfte amongst them. Spoon over the chopped tomatoes. Pour over the hot stock and cover the whole tray with aluminium foil.
Place in the oven and whilst it is cooking keep an eye on the water, adding a little more boiling water, if necessary, to keep it slightly moist. You don’t want this to be too juicy, it should have a nice baked taste about it.
Bake for ½ hr-40 minutes until the potatoes are softened, by which time the köfte will also be cooked. Take off the aluminium foil and let the potatoes brown.
May be served with tomato rice or on its own.
