Cod in Batter

Ingredients

  • 4 pieces of cod
  • Seasoned flour to coat
  • 1-2 tsp. finely grated lemon rind (optional)
Batter
  • 75 gr. (3 oz.) s.r. flour
  • ¼ tsp. salt
  • Freshly ground black pepper
  • 75 ml. (3 fl. oz.) + 1-2 tbsp. water
  • Sunflower oil to fry

Method

To make the batter:

Place the flour, salt and pepper in a narrow-sided dish and add the water a little at a time, whisking gently to mix well in. You need to have a thick but loose mixture so add more water if necessary. Leave to one side.

Put sufficient seasoned flour into another narrow-sided dish and sprinkle in the grated lemon rind, if using.

Pat dry each piece of cod and coat with the seasoned flour, turning over each piece well. Leave to one side on a separate plate.

Fill a large frying pan with enough oil to come halfway up the fish and heat until hot enough to fry.

Dip the floured fish into the batter, coating as much as possible and letting it glide through the mix. Lift and shake a little, dip a little more if necessary and place in the hot fat.

Fry 3-4 minutes each side and drain on paper kitchen towel.

Serve with oven baked chips and peas or beans and carrots.
