Bacon and Egg Flan

Ingredients

Pastry
  • 175 gr. (6 oz.) plain flour
  • 1 tsp. salt
  • 75 gr. (3 oz.) butter
  • 1 egg yolk
  • 1-2 tbsp. cold water
Filling
  • 175 gr. (6 oz.) streaky bacon
  • 2 eggs
  • 275 ml (½ pt.) milk
  • Salt and pepper
  • Preheat oven to 170°C
  • Lightly grease a 20 cm. (8") flan tin

Method

Make up pastry and rest in fridge for at least 15 minutes before rolling out.

Line a 20 cm. (8") flan tin with the pastry. Cut the bacon into small pieces, fry in a little butter and place in the base of the flan. Beat together the eggs and the milk and add the seasoning. Pour this over the bacon in the flan case and bake at 170°C for about 35-40 minutes.

Serve hot or cold, with a fresh, crunchy salad and a few chips.

You could also fry some onion (which has been chopped small) until softened then add the bacon, stir a minute or two and place this in the base of the flan.
