Pineapple Snowball (with strawberries)
Ingredients
- 1 Jam-filled swiss roll
- 1 can pineapple rings
- Whipped double cream
- Strawberries
- To decorate:
- Strawberries
- Chopped Pistachio nuts
- For a really quick dessert
Method

Cut the swiss roll into thick slices.

Place one pineapple ring in an individual serving dish and lay a slice of swiss roll on top of it. Drizzle 2 tbsp. of the pineapple juice over the swiss roll slice, enough to soak in well. Place another pineapple ring on top to cover it. Place a small strawberry in the centre of the ring. Pour a little more juice around the base.

Whip the double cream until stiff but soft, and smooth it all over the dessert to cover like a snowball. Decorate with strawberries and/or chopped pistachio nuts.

You can also mix a little sherry or liqueur with the pineapple juice.

Use other fresh or tinned fruits in place of the strawberries.
