Pancakes

Ingredients
- 110 g. (4 oz.) plain flour
- pinch of salt
- 2 large eggs
- 275 ml (½ pt.) milk
- Butter or margarine for frying
Method
Sieve the flour and salt into a large mixing bowl. Make a well in the centre of the flour and break in the two eggs. Whisk the eggs with an electric whisk incorporating the flour little by little as you do so. Slowly start to add the milk and water mixture gradually. Slide a rubber spatula around the bowl to clean it of any flour and then give a good whisk until the batter is smooth and has the consistency of thin cream.
Melt a little butter or margarine in the pancake pan and swirl it around. When the pan is really hot, turn the heat down to medium and pour in a little of the batter. Turn the pan around so that you coat the base of the pan evenly. Slide a knife under the edge of the pancake to see when it is cooked and flip over!
Serve with your choice of filling:
Cherry jam and cream
Chocolate sauce and ice cream
Lemon and sugar
Maple syrup and ice cream
Warmed strawberries with chocolate sauce and ice cream
(heat strawberries with a little sugar in the microwave until just losing their firmness)
