Orange Mousse

Orange Mousse

Ingredients

  • 1 pkt. (135 gr./4¾ oz.) Orange jelly, cut into
  • small pieces
  • 1 small can (170gr./6 fl. oz.) evaporated milk,
cooled in fridge
  • 150 ml (¼ pt.) orange juice
  • 150 ml (¼ pt.) water
To decorate
  • Mandarin oranges
  • Sprinkling of grated chocolate
  • It's important in this recipe that the evaporated milk is cold. Place in the fridge overnight or for at least a couple of hours before using. This is because it will whisk up better when cold and may not whisk up much at all if at room temperature.

Method

Put the jelly into a bowl or jug suitable for the microwave. Take 3 tbsp. water from the 150 ml (¼ pt.) water and pour over the jelly. Microwave for about 30 seconds to 1 minute, until it has dissolved. Give a good stir.

Pour in the orange juice and the remainder of the water, again stirring round. Place in fridge to cool and thicken slightly. (It can also be placed in the freezer for about 10 minutes to speed things up!).

Whisk the cold evaporated milk until light, fluffy and doubled in volume. Gently beat in the cooled jelly.

At this stage some chopped mandarin oranges can be stirred into the mousse.

Pour into a suitable serving dish or into individual dishes, cover with cling film and leave to set in the fridge.

Decorate with the mandarin oranges and a sprinkling of finely grated chocolate.
