Layered Meringue Dessert

Ingredients
- Raspberries, some for blending and some whole
- Strawberries
- Small meringues
- Double cream (pouring type)
- Ice cream
Method
Make a raspberry coulis, by whizzing some raspberries with a little water and caster sugar. A hand blender is good for this.
Sieve into a jug.
Cut the strawberries into small chunks and break up the meringue into small pieces.
Now assemble the dessert in individual sundae glasses.
Place a few meringue pieces in the bottom of each glass, add a few strawberry chunks and drizzle over some raspberry coulis. Pour over a little cream.
Do one more layer, adding strawberries and raspberries. Then add some ice cream. Press well down. Pour over more raspberry coulis and then layer as before – still pressing down - finishing with ice cream.
Decorate with meringue pieces and fruit, add a final topping of cream and finish with more raspberry coulis.
Variations
You can use tinned fruit, e.g. peaches, pineapples or mixed fruit, together with the raspberries. Use whatever combination you enjoy. Layering, as you like, as you go!
