Pizza Stuffed with Cheese, Tomato & Onion

Ingredients
- 1 tsp. dried yeast (fast action)
- 450 gr. (1 lb.) strong white bread flour
- 1 tsp. salt
- 2 tbsp. olive oil
- 250 ml. (9 fl. oz.) water
- 1 heaped tbsp. arrabiata sauce
- or passata
- ½ red onion, finely sliced
- 110 gr. (4 oz.) feta cheese, crumbled
- 75 gr. (3 oz.) grated cheddar cheese
- 1 large tomato, cut into small pieces
- Salt
- Freshly ground black pepper
- 1 tsp. dried oregano ( or 1 tbsp. fresh)
- 1 tbsp. olive oil for drizzling
- a little Sea salt
- Sprinkling of dried or fresh
- oregano
- This dough was made with the Panasonic breadmaker SD 253
- Prior to baking, preheat oven to 180ºC
Method
First, take the bread pan out of the machine.
Place the dried yeast in the pan, cover it with the flour and salt. Add the olive oil and pour over the water.
Put the bread pan back in the machine. Press select to choose the Pizza option (45 minutes). Press Start.
When the dough is ready, turn onto a lightly floured surface and knead a little until smooth and elastic. Divide into two pieces.
Roll out the dough to about 1/8” thick. I use a rolling pin and my oklava (see information). This narrow rolling pin makes it easier to obtain a thinner dough. Roll out to either a 14” circle or a 14”x12” rectangle, approx. Place on a lightly oiled baking sheet.
Roll out the second piece to the same size. Leave for a moment.
Now for the nice bit! Brush the arrabiata sauce over the whole of the dough base on the baking sheet and spread over the red onion, chopped tomato and the two cheeses, making sure you go as near to the edge as possible. Season well and sprinkle over the oregano.
Top with the second piece of dough and press the edges well together. Cover with a piece of clingfilm and/or a warm, clean tea towel and leave to rise in a warm place for about 40 minutes.
Drizzle over a tablespoon of oil and sprinkle with a little sea salt and the oregano. Bake until nicely golden and crisp - about 25-30 minutes. Cut into slices or wedges and serve.
Note: The filling amount is a guideline, add more if you like, also add salami or pepperoni, ham or sausage (sliced diagonally & thinly). Whatever you use it will taste delicious!
