Focaccia Bread with Feta Cheese, Garlic & Parsley

Ingredients
- ½ tsp. dried yeast (fast action)
- 300 gr. (11 oz.) Strong white flour
- 1 tsp. salt
- 1 tbsp. olive oil
- 200 ml. (7 fl. oz.) water
- 1 tbsp. olive oil
- 2 cloves garlic, crushed
- 110 gr. (4 oz.) feta cheese
- 1 tbsp. chopped parsley
- Paprika
- Sea salt
- This dough was made with the Panasonic breadmaker SD 253
- Prior to baking, preheat oven to 200ºC
Method
First, take the bread pan out of the machine.
Place the dried yeast in the pan, cover it with the flour and sprinkle in the salt. Add the olive oil and pour over the water.
Put the bread pan back in the machine.
Press select to choose the Pizza option (45 minutes). Press Start.
When the dough is ready, roll into a 30cm. x 25.5cm (12”x10”) rectangle.
Brush olive oil liberally over the surface of the dough and press on the garlic with your hands. Scatter over the cheese.
Cover with a clean tea towel and leave to prove in a warm place until the dough doubles in size - about 1 hr.
Sprinkle over the chopped parsley, give a light dusting of paprika and a grinding of sea salt. Bake in the hot oven for about 15-20 minutes until cooked and golden brown.
Serve as a light lunch on its own or with a salad and a glass of Ayran. Also good cut into pieces and served with soup.
