Apricot & Walnut Bread

Ingredients

  • Size: Large Time: 4 hours
  • 1 tsp. dried yeast (fast action)
  • 500 gr. (1 lb. 2 oz.) strong white bread flour *
  • 1 tbsp. sugar
  • 1½ tsp. salt
  • 25 gr. (1 oz.) butter
  • 350 ml (12 oz.) water
  • 75 gr. (3 oz.) dried ready to eat apricots, chopped
  • 50 gr. (2 oz.) walnuts, chopped
  • This bread was made with the Panasonic breadmaker SD 253 – which has a raisin nut dispenser
  • * For a fuller flavour, substitute 100 gr. (3½ oz.) of the strong white flour with 100 gr. (3½ oz.) strong wholemeal
  • flour and add 360 ml. (an extra 2 tsp.) water to the mix.
  • The water can be replaced with milk, if baking straight away.

Method

First, take the bread pan out of the machine.

Now place the dried yeast in the pan, cover it with the flour (reserving ½ tsp. to mix with the apricots and walnuts) and add the sugar, salt and the butter which has been chopped into small pieces.

Pour the water/milk gently over the flour and other ingredients.

Put the bread pan back in the machine.

Mix the chopped apricots and walnuts together with the ½ tsp. flour which was reserved, to prevent them from sticking and keeping them nice and separate. Place them in the raisin nut dispenser.

Press select to choose the Basic type of bread. Now press option to choose Bake Raisin. Press size and select Large. Finally press Crust to select your choice of light or dark.

Press Start.

When the time is up and the machine bleeps, take the bread out of the machine and invert onto a rack to cool.
