Orange Cream Cheese Frosting

Makes enough topping to fill and top an 8" cake

Orange Cream Cheese Frosting

Ingredients

  • or 30+ cupcakes
  • 100 gr. (3½ oz.) full fat Mascarpone cheese
  • 50 gr. (2 oz.) butter, softened
  • 50 gr. (2 oz.) icing sugar
  • Zest of ½ orange
  • ½ tsp. orange juice
  • This really does taste lovely with carrot cake…… I tried Philadelphia cream cheese, but think Mascarpone is so much lighter. Make sure it is full fat, otherwise it will be watery.

Method

Take the butter out of the fridge and leave to soften for an hour or so.

Sift the icing sugar into a large mixing bowl. Add the orange zest and ½ tsp. orange juice. (I used a parer to grate the peel as it makes nice strands, then I chopped them into smaller pieces).

Place the Mascarpone cheese and the softened butter on top.

Use a large metal spoon to press and gently mix all the ingredients together, until the icing sugar has been fully incorporated. (This way you prevent being covered in a dusting of icing sugar!)

Now use a hand mixer to beat it well, until fluffy and soft.

Can be used as a topping or a filling.
