Millionaire's Shortbread

Ingredients
- 225 gr. (8 oz.) butter
- 150 gr. (6 oz.) caster sugar
- 150 gr. (6 oz.) self raising flour, sifted
- 2 tbsp. golden syrup
- 218 gr. (8 fl. oz.) can Nestlé sweetened
- condensed milk
- Topping
- 150 gr. (6 oz.) dark chocolate
- or
- 75 gr. (3 oz.) white chocolate, melted
- 75 gr. (3 oz.) dark chocolate, melted
- Preheat oven to 180°C.
- Grease an 18 x 18 cm (7" x 7") square tin. Approximate size.
Method
Cream together 110 gr. (4 oz.) of the butter and 50 gr. (2 oz.) of the sugar until light and fluffy. Sift in the flour. Mix with your hands to form a soft dough.
Press the mixture evenly over the base of the tin and bake for 15-20 minutes, until golden. Leave to cool.
Put the remaining butter and caster sugar in a saucepan with the 2 tbsp. golden syrup and Nestlé condensed milk. Place over a low heat until dissolved, then boil gently for 3-4 minutes, stirring continuously, until golden brown. Spread the caramel over the cooked base and leave to cool.
Melt the chocolate in the microwave or in a bain marie. Pour over the caramel and spread evenly. Leave to set. If using the white and dark chocolates, pour these over the caramel and swirl to create a pattern
When the chocolate has set, cut the millionaire's shortbread into 16 pieces. Store in an airtight container for up to 2 weeks.
