Gingerbread Biscuits

Ingredients

  • 350 gr. (12 oz.) plain flour
  • 1 tsp. bicarbonate of soda
  • 2-3 tsp. ground ginger
  • 1 tsp. cinnamon
  • 110 gr. (4 oz.) butter or margarine
  • 175 gr. (6 oz.) light brown sugar
  • 4 tbsp. golden syrup
  • 1 egg, lightly beaten
  • Preheat oven to 170°C Lightly grease a baking sheet or line it with baking parchment

Method

1

Sieve the flour, bicarbonate of soda, ginger and cinnamon into a large bowl.

2

Rub the butter into the dry ingredients until like fine breadcrumbs. Stir in the sugar.

3

Spoon in the syrup and the lightly beaten egg.

4

Form into dough. If making this in a mixer, finish off the kneading with your hands. Chill for 15 to 30 minutes, or overnight if you want to prepare in advance.

5

Take out the chilled dough and divide into two. Roll until about 5 mm. (¼") thick and cut into gingerbread men or different biscuit shapes. Place on the baking sheet.

6

CHILL for about 20 minutes. This is so they don't lose their shape. This helps for all cookies or biscuits.

7

Bake for 10-12 minutes. Leave to cool slightly; then gently lift onto a cooling rack.
