Gingerbread Biscuits

Ingredients
- 350 gr. (12 oz.) plain flour
- 1 tsp. bicarbonate of soda
- 2-3 tsp. ground ginger
- 1 tsp. cinnamon
- 110 gr. (4 oz.) butter or margarine
- 175 gr. (6 oz.) light brown sugar
- 4 tbsp. golden syrup
- 1 egg, lightly beaten
- Preheat oven to 170°C Lightly grease a baking sheet or line it with baking parchment
Method

Sieve the flour, bicarbonate of soda, ginger and cinnamon into a large bowl.

Rub the butter into the dry ingredients until like fine breadcrumbs. Stir in the sugar.

Spoon in the syrup and the lightly beaten egg.

Form into dough. If making this in a mixer, finish off the kneading with your hands. Chill for 15 to 30 minutes, or overnight if you want to prepare in advance.

Take out the chilled dough and divide into two. Roll until about 5 mm. (¼") thick and cut into gingerbread men or different biscuit shapes. Place on the baking sheet.

CHILL for about 20 minutes. This is so they don't lose their shape. This helps for all cookies or biscuits.

Bake for 10-12 minutes. Leave to cool slightly; then gently lift onto a cooling rack.
