Easter Buns

Ingredients
- 110 gr. (4 oz.) butter/margarine
- 110 gr. (4 oz.) caster sugar
- ½ tsp. almond essence
- 2 eggs
- 110 gr. (4 oz.) plain flour
- 25 gr. (1 oz.) ground almonds
- 75 gr. (3 oz.) currants*
- 50 gr. (2 oz.) sultanas*
- a little chopped peel*
- 50 gr. (2 oz.) glacé cherries, chopped
- *(you can use 125 gr. (5 oz) mixed
- dried fruit, which will include the peel
- and then add the 50 gr. (2 oz.)

- Preheat oven to 170°C
- Grease and flour bun/cup cake tins
Method

Cream together the butter/margarine and caster sugar. Beat in the almond essence. Now beat in the eggs one at a time.

Sift the plain flour and stir in the ground almonds. Add 1 flat tbsp. of this mix to the dried fruit and cherries – this keeps them separate and dry, so that they don’t sink in the cake mixture.

Fold the flour and almonds into the creamed mixture. Stir in the currants, sultanas and cherries together with a little chopped peel.

Fill the bun tins and sprinkle the tops with finely chopped or flaked almonds.

Bake in oven at 170°C for 10-15minutes.
