Chocolate & Orange Marble Cake

Ingredients

  • 275 gr. (10 oz.) self raising flour
  • ¼ tsp. bicarbonate of soda
  • 225 gr. (8 oz.) softened butter
  • 225 gr. (8 oz.) golden caster sugar
  • 1 tbsp. grated rind 1 orange
  • 4 large eggs
  • ½ tsp. vanilla extract
  • 2 tbsp. orange juice
  • 2 level tsp. cocoa powder dissolved in
  • 2 tbsp. boiling water and cooled
  • To decorate (optional):
  • 50 gr. (2 oz.) dark chocolate, melted
  • 50 gr. (2 oz.) white chocolate, melted
  • Preheat oven to 160°C
  • Lightly grease and line the base of a 900 gr. (2 lb.) loaf tin with baking parchment.

Method

Sift the flour and bicarbonate of soda together, leave to one side.

Beat together the butter and caster sugar until nice and creamy. Add the grated orange rind and beat a little more.

Add the eggs, one at a time, beating well, adding a tbsp. flour with the last egg.

Add the vanilla extract and 1 tbsp. orange juice, beat a little, then add the flour and baking powder, mixing in gently.

Divide the mixture into two. Pour the dissolved cocoa into one of the mixtures and stir until well incorporated. Add the remaining 1 tbsp. orange juice to the plain mixture, mix well.

Place 6 alternate spoonfuls of mixture into the base of the tin and about 6 more spoonfuls, alternately, on top of the others. Gently knock your tin on the surface to flatten the mix.

Take a skewer and do a figure of eight several times through the mixture until it is marbled, knock your tin once more very gently on the surface to take out any air bubbles and place in the oven.

Bake at 160°C for about 45 minutes, or until a cake tester comes out clean.

Decorate with drizzles of melted dark and white chocolate (optional).
